Gaio apparteneva alla gens Fabia, una delle più illustri di Roma antica. Dalla Naturalis historia di Plinio il Vecchio apprendiamo che, sul finire del IV secolo a.C., Fabio avrebbe adornato con pitture il tempio di Salus sul Quirinale, su commissione di Gaio Giunio Bubulco Bruto, che era stato console nel 311 a.C., aveva votato il tempio come censore nel 307 a.C. e lo dedicò nel 302 a.C., anno in cui era stato nominato dittatore. Si tratta della più antica menzione esistente di pittura romana: per quanto riguarda i soggetti raffigurati, è probabile che i dipinti celebrassero le vittorie riportate da Bubulco nella seconda guerra sannitica. I quadri di Fabio sopravvissero fino all'età imperiale, quando andarono distrutti da un incendio ai tempi di Claudio. Ad ogni modo, benché noti a Plinio (che compose la Naturalis historia qualche decennio più tardi, in età flavia, ma che comunque avrebbe potuto vederli prima che andassero distrutti), nella sua trattazione egli non si dilunga né sul soggetto rappresentato né sulla tecnica adoperata. È in effetti possibile che, forse anche a causa di una mancanza di particolare raffinamento in un'arte che allora in Roma era ai suoi inizi, all'epoca di Fabio la pittura non godesse di particolare considerazione presso i romani, e che il cognomen Pictor, che egli si guadagnò con la sua attività e trasmise ai suoi discendenti, non andasse considerato una distinzione d'onore, ma fosse piuttosto inteso a biasimare l'illustre personaggio che aveva svilito la sua dignità dedicandosi a un'arte allora tenuta in poco conto, anziché a occupazioni ritenute più meritevoli di un cittadino romano. Ciò parrebbe confermato dalla testimonianza di Cicerone. Nondimeno, anche ammesso che questa interpretazione corrisponda a realtà, ciò non sembra aver avuto ripercussioni negative sulla carriera politico-militare dei suoi figli, tanto che entrambi divennero consoli: il suo omonimo nel 269 a.C., e Numerio Fabio Pittore nel 266 a.C.
